That looks wonderful! Wish I had been there.
A few questions:
– How were the roasted beets? I’ve never roasted them before…I usually use them in salads. Did you like? What other veggies did you roast with them? (hard to tell from the pic).
– Do you have a recipe for the thai red curry sweet potatoes? I am intrigued by the combination.
…good thing I’m still stuffed full from dinner or this post would be making me super hungry.

beets: i love them roasted. usually what i do is leave about two inches of the greens attached, wash the beets well and roast them whole. (400, in a covered pan with a splash of water for about an hour.) once they are cooked you can slip the skins right off and either eat them as they are or cut them into smaller chunks and put some salt and a nice amount of vinegar on and store them in the fridge for use in salads and so on. phew, this is long.
i did like them cut up and roasted with all the other veggies and they made the dish beautifully colored. with beets, i find the more i eat them the more i like them. funny thing. other vegetables in the roast – delicata squash, carrots, onion, garlic, celeriac, rutabaga, daikon radish, turnips and potato. so basically, what root vegetable isn’t in there might be a better question.

steph the stuffing muffins were so good. i am totally addicted. it has only been 24 hours since i ate one and i am considering cooking up another batch!
I love beets mixed in with the roasted veg. But I have never tried to add cilantro and lime. I am usually drooling over them with just olive oi, garlic and salt and pepper for seasoning, but cilantro and lime would really kick it up to a whole new level. Thanks for the idea!

the cilantro/lime was yummy and it went nicely with the curry sweet potato flavor.
