up at the top of this blog is says that i write about food but i’ll be the first to admit i have been doing very little writing lately and even less writing about what i am eating. maybe i lost the joy of cooking for a little while there. not the book. the literal joy. i don’t know. but yesterday i banged out some apple chocolate chip cookies and a cabbage soup and it was down right pleasing.
i was inspired by 101cookbooks recent post on soup and i took off from there. i ended up making an odd little cabbage soup with what i happened to have on hand and it was enjoyable in that it was warm and healthy and garlicy. i am a believer that you can’t really go too far wrong with soup. what i did:
heat up some olive oil in my pot
start cooking 4 celery roots in it
then add two chopped onions
then add two large chopped carrots
then add five garlic cloves
season with salt as they cooked.
once things were softening i added about 4 cups of water and one large can of kidney beans (i really wanted white beans but had none on hand). i also added about two teaspoons of better than bullion.
once that came to a boil i added one half of a nappa cabbage that i had chopped into bite sized pieces.
once the cabbage had softened a bit the soup was done. i drizzled olive oil on it and some grated parmesan cheese and dug in. YUM.
